So what does ones counter look like on the third of July? Somewhat like this… not including the slice and bake cookies that I wanted to instead replace with homemade brownies but yeah, I went with the easiest option. They are 70% organic and a portion of their proceeds going to the Folk Artist’s Fund to support creative endeavors for youngsters – so I was just thinking of the better good of mankind… I’m baking away while little Dix is off romping around Central Park with Tam and a couple of her friends. I haven’t been able to clean this much this quickly in a long time. Loving it.

Anyhow, I have mostly everything to be ready for the weekend’s festivities, minus the cream cheese to make the spinach and artichoke dip (yum). I’m pretty excited about two cook-outs (one to replace my original intended trip to Long Island – instead we’re off to Queens) and just hoping the weather chooses to cooperate. May even be squeezing in some prime sun time, again um sun being present being a key factor, in Central Park. Looking forward to it.
